Perfection as a pastry chef is not an easy thing, and there have been times in his career when Thomas has asked himself, “Why do I do this?” Like the time he was supporting a cake in the back of a delivery truck, and the driver hit the brakes, causing much of the cake to end up on Thomas.
“In the end,” he says, “the challenges are eclipsed by the pure joy of the finished product.”
Thomas loves to work with fresh ingredients and great people, which is an every-day occurrence at Davio’s. (He also loves Penn State football. Go Nittany Lions!)
