Justin Albertson

Executive Chef

Justin Albertson was born in Ames, IA and grew up in Bellevue, NE. Albertson has honed his skills in various locations including Nebraska, Kansas and Austin. He credits his father as the most influential figure in his life especially in shaping his decision to become a chef. “My dad was a chef when I was younger and I always wanted to be like him,” Albertson reflects. Albertson’s cooking style is best described as elevated modern American with a strong Italian influence. “What I love most about being a chef is the creative aspect and the ability to positively influence so many people’s lives and days,” he shares.

Albertson is a self-taught chef, he takes pride in his expertise in staff development, emphasizing his commitment to helping others grow beyond their own expectations. “I’m also a numbers nerd—anything I can count or track, I do meticulously, making sure not a single detail is missed,” he notes. His dedication to guest satisfaction is unwavering. “I believe the guest is everything in our industry. Ensuring they have the best experience is my top priority and I do everything in my power to make sure they leave wanting to come back.”

Outside of the kitchen, Albertson enjoys sports, particularly as a fan of the St. Louis Cardinals, Los Angeles Rams and Dallas Mavericks. He’s also an avid reader, often diving into cookbooks, biographies, fantasy novels or anything that stimulates his mind. Albertson is happily married to his wife, Winnie. They have a daughter named Winn and reside in Red Oak, TX.
